The Lebanese za'atar blend — thyme leaves with toasted sesame, roasted corn and melon seeds, bound with a little sunflower oil and sharpened with citric acid. Stir it into olive oil for man'oushe, dust it over labneh and warm bread, or rub it onto chicken before roasting.
