Şalgam — the deep purple fermented turnip-and-carrot juice of Adana, salty and sour rather than sweet, and the traditional partner to kebab. This is the acısız (mild) version, without chilli.

Ingredients: water, purple carrot, rock salt, boiled and pounded wheat (bulgur), turnip, preservative (E211).
