Choosing a grind. Fine steams light and delicate — best for seffa, for soaking up a thin broth, or with fish. Medium is the everyday grind most Algerian and Moroccan recipes assume. Coarse has more bite and suits hearty meat and vegetable stews.

How to prepare. Traditionally steamed over the stew in a couscoussier in two or three passes, working a little oil and water through the grains between each. Quick method: cover with an equal volume of boiling salted water, rest 5 minutes, then fork through with butter or olive oil.
